Ingredients: 2 ½ Cups of Unbleached white flour 1/4 Cup of Vegetable oil 1 tsp Vanilla extract 1 tsp Baking soda 1 tsp Baking powder 3/4 Cup of All natural applesauce 1 Egg 1 Cup of Solid-pack pumpkin 1/4 c Honey Directions: In a bowl, mix all ingredients until well blended. Spoon batter into muffin cups. Bake at 375 degrees for 25 minutes. Cool and either enjoy, or add frosting! Cream Cheese Frosting Ingredients: 8 ounces cream cheese (low or fat free) 2 Tbsp. honey 2 Tbsp. plain yogurt (low or fat free) flour (Just a touch to help thicken the Frosting) Directions Mix the ingreidents well.
